Valeriana officinalis,Valerian roots are harvested in the fall of the first year or second year. After that, the roots knot-up and trap dirt. The roots can be lifted with a garden fork, or for larger plantings with a potato digger. Care must be taken to wash off all dirt adhering to roots. They should be washed under running water with enough pressure to dislodge adhering dirt particles. Dry under shade or low forced heat (below 100° F.) Valerian’s characteristic odor develops on drying.
