Hordeum vulgare, Barley, Barley Grass is a widely distributed grain crop throughout the world, cultivated for millennia. It originated in the Middle East region extending to the Caucasus, occurring between the Red Sea and Caspian Sea. Health food advocates value barley grass and barley grass juice as an antioxidant and anti-inflammatory food. The crushed grain infused in cold water serves as a nutritive food for convalescing patients. Also considered demulcent or soothing to irritated mucous membranes. Barley was the first cereal crop to be cultivated. Its use predates the development of writing. The Egyptians and Greeks believed barley to be a sacred gift from the gods. Barley has been valued for centuries as a food staple.
