Valeriana officinalis, Valerian a culinary herb? In Medieval England its flavor was considered a delightful flavor for broths and pottages. In the 1597 edition of the famous Herball of John Gerarde, the author relates that the poorer class of people in the north of England considered valerian an essential flavoring ingredient for broths and soups. Historically, valerian is considered one of the best of herbal sleep aids and antispasmodics.
